My guest today is baker Betsy Gonzalez, owner of the award winning bakery Osono Bread in Atlanta, Georgia. Betsy is a community supported baker who founded Osono Bread after traveling through Europe and working in several bakeries and being inspired by their old world approach to bread. Betsy has made it her mission to connect her community to their local grain economy through the practice of making naturally leavened breads. She is an inspiration to myself and many others in our small but growing cottage baker community.
