Eric Pallant, Author of Sourdough Culture

My guest today is Dr. Eric Pallant. Eric is a two-time Fulbright Scholar, award-winning professor, and the Christine Scott Nelson Endowed Professor of Environmental Science and Sustainability at Allegheny College. His research has been published in magazines such as Gastronomica, Sierra, and Science. He is also a serious amateur baker. He lives in Meadville, Pennsylvania, with his wife, cat, and four active sourdough starters. Eric is joining me today to talk about his new book SOURDOUGH CULTURE: A History of Bread Making from Ancient to Modern Bakers.
